Perfect for parties and holidays, after-school snacks, or as a quick and easy dessert to keep in the refrigerator, these chocolate-covered marshmallows take just a few minutes to prepare.

Also called marshmallow pops, these are a wonderful dessert to create together with children or as a group, and because they’re prepared on skewers, they’re easy to assemble and convenient to snack on. These marshmallow skewers can be served plain, coated with melted chocolate, but you can also create a fun platter by sprinkling different toppings over the chocolate before refrigerating them to harden. All you have to do is take this base recipe and then get as creative as you want!

Ingredients for Chocolate-Covered Marshmallows

If you're just making chocolate-covered marshmallows, you'll need four ingredients and some lollipop sticks. If you're adding any toppings, you'll need a few more. We've got some ideas below for that.

  • Semisweet chocolate chips: You can use another type of chocolate chip if you want, but we like the balance of sweetness in semisweet chips. Once toppings are added, milk chocolate might be too sweet, but use whatever you like.
  • Coconut oil: Added to the chocolate, this helps the chocolate melt smoothly, and will help it solidify and harden once chilled.
  • Vanilla extract: This adds some warm vanilla flavor to the chocolate chips, but you can skip if you don't have it. You could also use another extract like peppermint or almond if you want.
  • Marshmallows: Get those fresh, big puffs.
  • Lollipop sticks: These may be available in a supermarket, or go to your favorite craft store. Sometimes, they even have colorful sticks.

How To Make Chocolate-Covered Marshmallows

Set up your marshmallow-dipping station before you get started so this will be fast and easy. Here's an outline of the process; the full recipe is further below:

  • Step 1. Arrange the lollipop sticks and baking sheet so you can easily dip and place the dipped marshmallows down.
  • Step 2. In a microwave-safe bowl, warm the chocolate chips, coconut oil, and vanilla extract until the mixture is melted and smooth.
  • Step 3. Skewer one marshmallow (or two, if you want) on a lollipop stick. Then dip the marshmallows in the chocolate mixture, swirling it if necessary to make sure all sides of the marshmallow are coated. Place the marshmallow on the baking sheet on one side or on the bottom. Immediately add any toppings.
  • Step 4. Once you've dipped all your marshmallows, chill the tray in the fridge until the chocolate sets fully.

Can You Make Chocolate-Covered Marshmallows Ahead of Time?

Yes, marshmallow pops are a great make-ahead option for a party or food gift at Christmas, Valentine's Day, and birthdays. Once the chocolate is set, you can store the marshmallows in an airtight container up to 3 days. You can also go ahead and package them in cellophane bags, tied with a beautiful ribbon. Because they're fully covered with chocolate, the marshmallows will not dry out as quickly as half-dipped marshmallows might.

We do not recommend freezing chocolate-covered marshmallows. The chocolate can sweat after thawing, and the toppings may no longer stick.

Directions

  1. Assemble a dipping station:

    Place lollipop sticks in a glass or coffee mug. Pour marshmallows into a large bowl. Line a baking sheet with parchment paper.

  2. Make chocolate mixture:

    Place chocolate chips, coconut oil, and vanilla extract in a microwave safe bowl. Microwave on HIGH in 20-second increments until chocolate is melted and smooth.

  3. Dip marshmallows:

    Secure 1 marshmallow on the end of each lollipop stick. One at a time, submerge each marshmallow in chocolate to coat. Allow excess chocolate to drip away, and then place marshmallow, flat side down, on the baking sheet. Immediately sprinkle with toppings, if using.

  4. Chill to harden chocolate:

    Once all marshmallows have been dipped, chill until chocolate sets, about 20 minutes.
